Summer is the best time of the year! It’s meant to be simple and fun and these easy appetizers will keep the stress-free theme going. I love to entertain year-round. However, I like to keep my warm-weather parties as stress free as possible. Start with a colorful table by adding fun dishes and fresh cut flowers. This delicious bruschetta combines my all-time favorite flavors into one tasty bite-size piece of heaven. There is nothing better than fresh tomatoes combined with garlic, basil and burrata cheese. And the color is perfect!

I love the burrata with this, however, you can swap in feta, goat cheese or fresh Parmesan shavings. If you use burrata, make  sure to tear it. Never cut burrata as it depletes the flavor.

This next appetizer takes the humble cucumber to stardom with just a few ingredients. Add some whipped feta to a crisp English cucumber and you have a tasty bite-size snack that’s sure to please a crowd. I love the pop of color and crunch that crumbled bacon and chives add to this dish. You may want to double up on these, as once your guests start, it will be hard to cool the cucumber.

Your guests will be equally impressed with a unique take on traditional chicken salad lettuce cups. This version has lots of spice thanks to curry, and some crunch from the carrots.

Endive is so easy to use and it goes perfectly with this curry chicken salad. If you’re not a fan of curry, simply substitute the chicken salad for a traditional recipe. I kept the calories down by substituting mostly Greek yogurt for mayonnaise.

Three ingredients is all you need to make these delicious prosciutto wrapped peaches and pears. You can just make this appetizer with one fruit or both. I had both peaches and pears on hand so I mixed it up.Prosciutto Wrapped Pears and Peaches

I added blue cheese with the pears, and I used the remaining burrata cheese from the bruschetta to combine it with the peaches. I topped it with store-bought balsamic glaze for extra flavor and a pop of color. The salty prosciutto goes perfectly with the sweet, juicy fruit. And I love how pretty these look! You can even grill them if you want, which would add some crunch.

Finally, a good party always calls for a beautiful cheese board. Cheese boards are so easy to throw together. Just add your favorite cheese (goat and brie are my favorites), fruit, olives, and crackers.

I absolutely love olives on a cheese board. I usually get a mix of different olives at the deli. Water cracker or even a baguette are my go-to for a cheese board. I always add a meat of some sort, too. I really like the Boars Head pepperoni. You can also add any leftover prosciutto you have as well.
