Roasted potatoes are wonderful and not unhealthy – don’t get me wrong. The air fryer method just calls for less oil but certainly doesn’t lack in flavor!

Herby Garlic Air Fryer Potatoes

Is there a more versatile vegetable than the potato? From the potato we get French fries, mashed potatoes, roasted potatoes, hash browns and the list goes on. They can be eaten boiled, fried, roasted, steamed, and again, the list goes on. Currently, my favorite way to cook potatoes, is in the air fryer. These Herby Garlic Air Fryer Potatoes get perfectly crispy and they’re so easy to make!

This is a perfect summertime side dish thanks to the fresh herbs and minimal prep. In fact, there’s hardly any prep involved in this dish. Just a quick wash of the potatoes, chop of the herbs and garlic and your prep work is done. Bonus: there’s no heating of the stove involved!

I just love my air fryer, and this recipe is one of the best ones you can make with it. The potato skin gets perfectly crispy and little oil is used. Only a light coating of olive oil is needed and the air fryer does its job perfectly in creating a nice crispy spud!

Tips for perfectly crispy potatoes

  • Use Baby Potatoes
  • Cook at 400 degrees
  • Use good quality sea salt and freshly cracked pepper
  • Herbs to Elevate Flavor: Parsley, chives, thyme and rosemary are best
  • Lightly smash the potatoes halfway through
  • Season well with salt & pepper

Herby Garlic Air Fryer Potatoes

  • Air Fryer

Ingredients
  

  • 1 lbs Baby potatoes
  • 1 tbsp Olive Oil
  • 1/2 cup Freshly chopped herbs
  • 1.5 tsp Sea salt
  • .75 tsp Freshly cracked pepper
  • 4 cloves Garlic – grated or finely chopped

Instructions
 

  • In a large bowl, toss together the potatoes and rest of the ingredients.
  • Place potatoes in the basket of the air fryer and cook at 400 degrees for 10 minutes. Try not to overload the basket, if needed cook in batches.
  • After 10 minutes shake the basket and take the bottom of a mason jar and lightly smash the potatoes.
  • Air fry for another 10 minutes or until the potatoes are crispy on the outside and tender on the inside.
