Meatless Monday Ideas
I love adding meat to my meals, but sometimes I just need a break. Taking the meat away does not mean less flavor, though! Meatless meals can be just as satisfying and healthier too. Below are some ideas and nearly everything can be prepped on Sunday.
- Monday: Veggie Quinoa Bowl: You can use any veggies you want. I’ve made this dish with a variety of veggies, but below is the recipe for the dish pictured. You can add chicken, salmon or canned tuna for more protein.
- Tuesday: Chickpea Pasta with Truffle Butter
- Wednesday: Panzanella Salad: Again you can add whatever vegetable you want to this dish. You can also add a meat or fish for more protein.
- Thursday: Roasted Veggie Baguette Sandwich
- Friday: Mediterreanean Zoodle Salad
