Veggie Quinoa Bowl

Veggie Quinoa Bowl: 

Ingredients:

  • 1 cup of quinoa
  • 1 sweet potato
  • 1 head of broccoli
  • 1 Zucchini
  • 1 cup of peas

Directions:

Cook the quinoa according to instructions. Divide among four bowls. Chop all of the veggies except for the peas and arrange them on a baking sheet. Drizzle the veggies with olive oil, salt and pepper. Bake at 400 for 20-25 minutes. Thaw the peas by running under water. Once the peas are thawed divide among the four bowls. Layer the peas on top of the quinoa. Do the same with the roasted veggies once they are done. Cover up the bowls and save for later or eat hot and fresh. For a little extra flavor, I drizzle some olive oil on top before eating, salt, pepper and freshly chopped basil or cilantro.
