Mediterranean Zoodle Salad

Ingredients:

  • Four large zucchini
  • 1 carton of grape tomatoes
  • 20 Greek olives
  • 1/2 cup of feta cheese
  • 1/2 of an english cucumber
  • 1/2 can of chickpeas
  • 1/4 cup of dijon vinaigrette dressing

I think it’s the most user-friendly, it takes up very little storage, and it's easy to clean. After the zucchini is in noodle form, I wrap in paper towel to soak up as much water as possible. this dish can tend to get watered down if you do not soak it up first. Once the water is soaked up I toss the zucchini and all other ingredients together. I garnish with fresh basil or parsley.
