Can we talk about easy meal prep?? Oh my goodness. Crockpot Pulled Pork Used Three Ways is the easiest! Basically there is no prep involved! haha. Last week I placed a large pork loin roast in the slow cooker on Sunday and with very little effort, I had three amazing meals for our family.

Different Types of Pork Roast

To start, purchase a pork roast. I prefer a leaner cut, so I buy the pork loin roast from Trader Joe’s. However, the classic cut for pulled pork is a pork shoulder, which is also called pork butt or Boston butt. Once you’ve chosen your cut of pork, season it well. I like to do a smokey chipotle seasoning which is in the recipe below.

Once the pork is seasoned well. Make sure you brown it to seal in the juices before placing in the crockpot. I think that’s key. Just add olive oil to a large pan and sear each side of the pork roast for a couple minutes until it’s nicely browned. I used a large (4lb) pork loin roast last week which made several meals. I turned it into Pulled Pork Tacos, Grain Bowls, and Quesadillas.

It was so delicious! And it made my week so easy! When you have a protein (in bulk) already prepared and on hand it helps make the workweek dinners so much easier. And you don’t feel like you’re eating the same thing over and over when you switch up how you use the protein.

You could make all of these same dishes with pulled chicken, too! Simply apply the same method in the recipe below to chicken breasts. However, you wouldn’t need to brown the chicken first. You could just place it in the slow cooker raw. I make shredded chicken all the time! They’re equally as delicious!

I especially loved adding the Pulled Pork to grain bowls. It was the perfect amount of protein and flavor that this fresh dish needed! The fresh veggies, combined with brown rice, pulled pork, and drizzled with my avocado dressing was so incredibly tasty!

In fact, I used the easy homemade avocado dressing on all three of the crockpot pulled pork dishes. I also made a large batch of it on Sunday as I knew it would be great to have on hand throughout the week.

Crockpot Pulled Pork

This recipe for crockpot pulled pork makes several meals to feed several people all week long. I made a large roast on Sunday and shred it to use in pulled pork tacos, pulled pork grain bowls, and quesadillas. You could also make nachos with this.

Ingredients
  

  • 1 4-5 lb Pork Roast (I prefer pork loin because it’s leaner)
  • 1 4.5 oz can green chiles
  • 1 15 oz can Diced tomatoes
  • 1 cup Fresh salsa
  • 4-5 tbsp smokey seasoning
  • 1 onion, diced
  • 4 cloves garlic, minced

Smokey Seasoning

  • 3 tbsp smoked paprika
  • 3 tbsp chili powder
  • 4 tsp onion powder
  • 2 tsp garlic powder
  • 2 tbsp cumin
  • 1 tbsp oregano
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tsp cayenne pepper

Instructions
 

  • Pat the roast dry and rub the smokey seasoning all over. Make sure the roast is well coated. Add olive oil to a large pan over high heat. Brown the roast on all sides for a couple minutes. 
  • Layer half the onion and garlic on the bottom of the crock pot. Place the seared roast on top and place the remaining ingredients on top of the roast. Cook on low for 8 hours or on high for 4 hours or until the roast is done. 
  • When the roast is cooked thoroughly, remove from the crockpot and shred using two forks. Return the meat to the crockpot and mix well with the juices. 
  • Use the pulled pork in a variety of different dishes including tacos, nachos, and grain bowls.
