I will be putting this Avocado Cilantro dressing on EVERYTHING this summer! It’s so fresh and tastes amazing on everything from salads to fish tacos. I’ve added it to the top of a grilled chicken breast, a burrito bowl, grilled veggie wraps, and more. I love how versatile this dressing is. And isn’t it pretty?! It’s so easy to make, too! I also included the recipe for a colorful salad that goes perfectly with this dressing. Cheers!

Dressing Ingredients:

  • 1 avocado
  • 1/4 cup chopped fresh cilantro
  • 2 cloves of garlic
  • 1/2 of a jalapeno
  • zest of one lime
  • 1/2 cup lime juice
  • Salt & Pepper to taste
  • 1/4 – 1/2 cup of greek yogurt
  • 1 tbsp olive oil

Directions:

Throw everything in a food processor and pulse until creamy. Add more lime juice or some olive oil if needed to get a creamer consistency.

Salad Ingredients:

  • 1/2 red cabbage, chopped
  • 1/2 napa cabbage
  • 2-3 cups of spinach
  • 2 green onions
  • 1 red pepper
  • 1 cup of shredded carrots
  • 1 can black beans, drained and rinsed
  • 1/2 bag of frozen corn, thawed
  • 1 red pepper

Directions:

Layer the chopped red cabbage on the bottom. Add the black beans, the corn, carrots, red pepper, napa cabbage, and lastly the spinach. Toss with the Cilantro Avocado Dressing about 10 minutes before serving. This salad is packed with flavor and crunch. You can easily adjust this salad to your liking. Black olives or roasted peppers would be good in it, too! Enjoy!
