Crockpot Pulled Pork

This recipe for crockpot pulled pork makes several meals to feed several people all week long. I made a large roast on Sunday and shred it to use in pulled pork tacos, pulled pork grain bowls, and quesadillas. You could also make nachos with this.

Ingredients
  

  • 1 4-5 lb Pork Roast (I prefer pork loin because it's leaner)
  • 1 4.5 oz can green chiles
  • 1 15 oz can Diced tomatoes
  • 1 cup Fresh salsa
  • 4-5 tbsp smokey seasoning
  • 1 onion, diced
  • 4 cloves garlic, minced

Smokey Seasoning

  • 3 tbsp smoked paprika
  • 3 tbsp chili powder
  • 4 tsp onion powder
  • 2 tsp garlic powder
  • 2 tbsp cumin
  • 1 tbsp oregano
  • 1 tbsp salt
  • 1 tbsp pepper
  • 1 tsp cayenne pepper

Instructions
 

  • Pat the roast dry and rub the smokey seasoning all over. Make sure the roast is well coated. Add olive oil to a large pan over high heat. Brown the roast on all sides for a couple minutes. 
  • Layer half the onion and garlic on the bottom of the crock pot. Place the seared roast on top and place the remaining ingredients on top of the roast. Cook on low for 8 hours or on high for 4 hours or until the roast is done. 
  • When the roast is cooked thoroughly, remove from the crockpot and shred using two forks. Return the meat to the crockpot and mix well with the juices. 
  • Use the pulled pork in a variety of different dishes including tacos, nachos, and grain bowls.
