Chances are you’ve seen me use Banza pasta here at Four Seasons of Autumn or over on my Instagram page. I’ve been cooking with it for nearly a year now. It’s chickpea pasta with twice the protein and about half the net carbs as traditional pasta. The company recently sent me a box of three different types of their pasta. I got a little extra creative with the free stuff; Lobster Truffle Mac and Cheese, Pickled Vegetable Pasta Salad, and Spicy Bolognese with Ziti.

Mac and Cheese with the Banza shells are a staple in our house. Lukas gobbles it up! I upped the anti this time and made my favorite version of Mac and Cheese – Lobster Truffle Mac and Cheese.

Oh. My. Goodness. Friends – you have to try this recipe! It’s my new favorite dish! So good. So creamy. Bursting with flavor. And you’d never know it’s chickpea pasta. Pickled Vegetable Pasta Salad

A salad without meat that’s packed with protein. Yes, it’s possible. That’s what this salad is all about! Since Banza pasta has so much protein in it, you don’t need meat.

Banza Rotini is the star of this salad. It adds perfect texture and tastes great alongside the pickled vegetables. This salad comes together so easily, too. Thanks to store bought pickled cauliflower, beets, and artichokes. I also added some olive, charred cheery tomatoes, mini bell peppers, and feta.

Pesto dressing is just what this salad needs. I also used store bought pesto for this. I simply added a little red wine vinegar and some olive oil. It adds great flavor and color to this dish!

Spicy Bolognese with Ziti

Lastly, but definitely not least is my Spicy Bolognese with Ziti. This is a simply wonderful pasta dish! Just a few ingredients, lots of spice and tons of flavor!

This would be a great weeknight meals because it’s easy to make, healthy, and comforting. I swapped spicy chicken sausage for beef in this Bolognese and it was a great call! It added just the right spice and had so much flavor! I love sausage in my pasta sauce. However, chicken sausage is a great alternative when I’m trying to cut some calories.

This was my first time using the Banza Ziti and it did not disappoint. The noodles held their shape and had great texture! This may be Lukas’s favorite dish! And it’s up there for me! I especialyl love how easy this is!
