Air Fryer Ginger Garlic Glazed Salmon with Zucchini Noodles is a healthy go-to weeknight meal ready in 15 minutes or less.

Veggie Spiralizer
The Glaze
- 3 cloves Garlic, grated
- 2 tbsp. Ginger, grated
- 2 tbsp. Miso
- 4 tbsp. Soy sauce
- 1 tbsp. Chinese Mustard
- 1 juice Lime
- 1 tbsp. Sesame oil
Add all of the glaze ingredients to a mixing bowl and mix well. You may need to add a little water to get the right consistency. It should have the consicstency of a thick marinade.
Place the slamon fillets in a dish with half of the mixture. Set the other half of the mixture aside for the zucchini noodles.
After the salmon fillets have been in the marinade for 15-30 minutes. Place them on an air fryer save tray. Cook at 400 degrees for 10 minutes. Alternatively you can bake at 400 for 10 minutes then broil for 1-2 minutes.
Zucchini Noodles
I use a Pampered Chef Spiralizer to get Zucchini Noodles. If you don't have a spirilizer you can use a vegetble peeler to get "noodles". It just takes a little longer. After you get the zucchinis into noodle form. Wrap in some papertowel and squeeze to get the water out. Right before serving, toss the noodles in the remining ginger garlic mixture.
