Air Fryer Ginger Garlic Glazed Salmon with Zucchini Noodles is a go-to weeknight meal for me time and time again. It’s easy, tasty and ready in 15 minutes (or less). As a busy working mom who also enjoys a nice meal I am always trying to find an easy yet nutritious and tasty weeknight dinner.

Have I mentioned before that my Air Fryer is my best friend? It speeds up the cooking process, minimizes the cleanup and still maximizes the taste! I especially love my Pampered Chef Deluxe Air Fryer. This is not a paid endorsement – I just absolutely love it! I could go on and on about the reasons I love it but lets get back to the Air Fryer Ginger Garlic Glazed Salmon with Zucchini Noodles. The salmon can of course be made in the oven but it gets a perfectly glazed texture in the Air Fryer.

Ginger Garlic Glaze

The Ginger Garlic Glaze in this recipe serves two purposes; It’s a marinade for the salmon and a dressing for the Zucchini Noodles. The combination of ingredients makes such an incredibly flavorful and versatile glaze or dressing. It can serve as a dressing for salad or a dip for spring rolls. Often time, I’ll double up the recipe here and store some in a mason jar for use later on in the week.

Air Fryer Salmon

Salmon with a perfectly glazed crust and flaky inside is hard to achieve. I find it’s easier to do so in the Air Fryer. Again, you can make this in the oven as well. However, I find the Air Fryer method helps achieve the perfectly cooked salmon. Your cooking time may change depending on the type of Air Fryer you have, but I found 400 degrees for 10 minutes on the Air Fryer mode is perfect for a 5-6 ounce piece of salmon.

Zucchini Noodles

The Ginger Garlic Glaze is soooo good that it has to be tossed with something that will soak up all the great flavor. Zucchini noodles are great for this! Regular noodles, rice noodles or ramen noodles are great, too. However, the lightness of the Zucchini Noodles, for me, makes this a great side alongside the salmon. I use my Pampered Chef old school spiralizer that they don’t sell anymore but a similar version is for sale. I just can’t vouch for the new one as I’ve never used. If it’s anything like the old one though, I’m sure it’s great!

Equipment

  • Air Fryer
  • Veggie Spiralizer

Ingredients
  

  • 4 5-8oz Salmon fillets

The Glaze

  • 3 cloves Garlic, grated
  • 2 tbsp. Ginger, grated
  • 2 tbsp. Miso
  • 4 tbsp. Soy sauce
  • 1 tbsp. Chinese Mustard
  • 1 juice Lime
  • 1 tbsp. Sesame oil

Zucchini Noodles

  • 2 Zucchini, spiralized

Instructions
 

  • Add all of the glaze ingredients to a mixing bowl and mix well. You may need to add a little water to get the right consistency. It should have the consicstency of a thick marinade.
  • Place the slamon fillets in a dish with half of the mixture. Set the other half of the mixture aside for the zucchini noodles.
  • After the salmon fillets have been in the marinade for 15-30 minutes. Place them on an air fryer save tray. Cook at 400 degrees for 10 minutes. Alternatively you can bake at 400 for 10 minutes then broil for 1-2 minutes.

Zucchini Noodles

  • I use a Pampered Chef Spiralizer to get Zucchini Noodles. If you don't have a spirilizer you can use a vegetble peeler to get "noodles". It just takes a little longer. After you get the zucchinis into noodle form. Wrap in some papertowel and squeeze to get the water out. Right before serving, toss the noodles in the remining ginger garlic mixture.
