Using a large heavy metal pan, pour the oil in the pan over high heat.
Let the oil heat up for about 2 minutes but watch closely - it may take less time. The instant you see the first small bubble then the oil is ready.
Pour the popcorn in the pan and cover immediately.
Once the kernels start to pop begin shaking the pan about every 30 seconds.
Continue shaking until the kernels have stopped popping.
Remove from heat and let the popcorn sit for a minute or two.
Pour the popcorn in a large bowl and toss with salt or your favorite seasonsing.
