Lets start with my absolute favorite soup – French Onion! This is such an amazing soup! Of course, this soup is better when you can spend hours in the kitchen to caramelize the onions (call me crazy but that’s a good day to me). However, if you don’t have all day or want to spend hours in the kitchen – you can easily speed up the process and it’s still a great soup!

French Onion Soup is my favorite. I seriously love it! There is so much flavor from the caramelized onions, wine, fresh thyme, and then layered with crusty bread and good Gruyere cheese – I feel like I’m typing up a love letter…I know I’m crazy! But I just LOVE all these ingredients.

From France to Italy – where our love story continues with Italian Wedding Soup. The term “wedding soup” comes from the Italian language phrase “minestra maritata” (“married soup”), which is a reference to the flavor produced by the combination/”marriage” of greens and meat. Is there a better combination??

Traditionally, beef and pork are used to make the meatballs in Italian Wedding Soup. While that is very tasty, I like to make mine a little healthier with ground chicken. Also very very good!

Now lets travel across the Mediterranean Sea to Greece! My love affair with Lemon Rice Soup started about ten years ago when I lived in Tennessee. Now what do Tennessee and Greece have in common? Well nothing really – haha. But I did have a Greek roommate when I lived there and her mom made us traditional Lemon Rice Soup (or Avgolemono Soup). It was so good! I’ve loved eating it (and making it) ever since!

This next soup is a little less romantic – but don’t let looks fool you – Ham and Bean Soup with Cabbage is AMAZING! The salty ham, creamy white beans, and silky cabbage are also a match made in heaven. Trust me! I grew up eating this soup – mostly for days after major holidays as our family would never let a ham go to waste! I didn’t appreciate this soup much as a child, but as an adult it’s comfort food!

20 Minute Chicken Tortellini Soup

Another family favorite of ours is Chicken Tortellini Soup. My mom makes an amazing Tortellini Pasta Salad and she always had leftover pasta. Again, not wanting anything to go to waste, she would use it in this recipe. Now I do the same thing! It’s one of the easiest recipes!
