Winter Citrus and Roasted Beet Salad
This salad beautifully celebrates the bounty of winter crops! The color is not only incredible, but the range of flavors from the blood oranges, to the grapefruit to the roasted beets creates a truly magical salad combination. And the saltiness from freshly grated Parmesan and hint of spice from the red onion takes this salad over the top! Make it a main course with a protein such as shrimp or keep it as is. There is no losing with this salad.
Roasted Root Vegetable Panzanella Salad
One of my favorite summertime salads is a Panzanella Salad. I’m giving it a winter remix with roasted root vegetables and an herby-Dijon vinaigrette. When the root vegetables are roasted the incredible earthy and sweet flavors really come to life. Those flavors combined with the herby and tangy vinaigrette, crusty bread, and creamy mozzarella creates salad perfection!
Radicchio, Pear and Arugula Salad with Grilled Chicken
Bitter and sweet play together perfectly in this gorgeous winter salad. Radicchio is such a beautiful vegetable but it’s also quite versatile with such a unique taste. You can grill it, toss it in pasta, bake it in a gratin or simply eat raw. It holds up beautifully in all dishes. I especially love it raw in this salad alongside the peppery arugula and juicy, sweet pears. The pungent blue cheese adds the perfect touch of funkiness to this salad – I just love it! Top it off with grilled chicken and you have yourself a perfect main course!
Kale Caesar Salad with Crispy Chickpeas
This is not your average Caesar Salad – it’s better! Way better. The hearty kale holds up so nicely to the creamy Caesar dressing. Many of you know I love salads but there’s nothing I dislike more than wet wilted lettuce. That’s why I LOVE working with Kale. It hearty texture holds up so nicely against dressings and other toppings. It makes an especially nice Caesar salad because the texture combines perfectly with the richness of a traditional Caesar dressing. I also steered from tradition in swapping croutons for crispy roasted chickpeas – and seriously – so good!
