Would you like to show someone just how much you love them this Valentine’s Day? May I recommend Bacon and Brie Pancakes? They will love you forever and ever. Promise. These are the pancakes that turned me into a pancake snob! The recipe is inspired by a similar dish I had at a local restaurant – The Laundry.
I used a traditional pancake batter (swapping regular flour for paleo flour) and I just used a heart shaped cookie cutter to get the adorable shape. However, the true love lies within the BACON and a really good brie cheese! I’m telling you, this combination is incredible!
The Perfect Match
This is the perfect mix of savory and sweet. The salty, crunchy bacon combined with brie and deliciously sweet pancakes, topped with good vanilla bean syrup is just the way to show someone how much you love them. At least, it works for me! Forget the flowers – bring me the bacon and cheese.
A good brie cheese and syrup are important with this dish. I recently found the Vanilla Bean Maple Syrup from Trader Joe’s and I absolutely LOVE it! It has the slightest hint of vanilla and smokey maple combination going on. It’s perfect with the bacon!
My valentine could not get enough of this recipe! He gobbled it up so quickly! His two year-old hands couldn’t shove these in fast enough. And he kept say “good” after every bite! Not only is he the cutest thing ever but he’s also a great food stylist assistant…

In a small bowl, combine Paleo Baking Flour, baking soda, and salt. In a large bowl, whisk together eggs, 1/3 cup milk, oil, honey or maple syrup, and vanilla extract.
Add flour blend and whisk thoroughly. If batter is too thick, add additional milk or water until it reaches a pourable consistency.
Pour ¼ cup batter onto the preheated skillet. Cook for about 4 minutes, then flip and continue to cook for 3 minutes. Repeat until all batter is used. Makes eight 4-inch pancakes.
Stack the pancakes two to three high. Add bacon and brie in between each pancake. Then place in a 400 degree oven for a few minutes until the brie just begins to melt.
