A Cinco de Mayo Menu to Enjoy All Year Long
Cinco de Mayo falls on Taco Tuesday this year. And we’re stuck inside because…well you know…the Corona virus. We’ve all seen the meme, right? Honestly, though, I’m okay with it. This menu is pretty yummy! It’s a Cinco de Mayo Menu to Enjoy All Year Long. And there’s a little something on the menu for everyone – including vegetarians.
Chipotle Tacos
Chipotle-marinated steak and chickens tacos are next level. The simple marinade adds incredible flavor! It’s such an easy marinade too, coming together in just a few minutes. I like adding steak and chicken to the taco menu – and making lots of each, as the leftovers make great nachos, salads, and burrito bowls! This marinade would even make a great dressing in a taco salad!
Hearty Meatless Beef Queso
When planning a menu, I like to keep it balanced with options for the meat lovers and vegetarians. And since the tacos are for the carnivores, I thought this Hearty Meatless Beef Queso would be great for those who don’t eat meat. I use Gardein Beefless Ground Beef – just adding some taco seasoning to it and mixing with Velveeta makes an amazing dip! It’s a great addition to nachos, too.
Easy Mexican Rice
This is perhaps the easiest dish on the menu. I simply used Zatarain’s Spanish Rice and added a tablespoon of the Chipotle marinade (mentioned above) and some black beans. So easy, so simple, yet a tasty addition to this Cinco de Mayo menu!
Sweet and Spicy Strawberry Peach Margarita
Again, using a few shortcuts – this margarita is so easy, much lower in sugar/calorie content, but WAY better than any restaurant margarita – I think 🙂 My shortcut? SkinnyGirl White Peach Margarita mix! It already has the tequila in there. I simply blended the mix with some frozen strawberries. The spicy part comes in the way of a little jalapeno – also blended in the mix, and the rim is a mix of salt and Tajin Classic Seasoning. So yum!

- Mexican Cheese

Chipotle-Marinated Steak and Chicken for Tacos
Ingredients
For the Marinade
- 1 7oz can Chipotle in Adobo Sauce
- 2 tbso Lime juice
- 1/2 tsp salt
- 3 cloves garlic
For the Meat
- 2 Thin cut chicken breasts
- 1 Flank Steak
Instructions
- Add all of the marinade ingredients to a blender and blend until the consistency of sour cream. Add more lime juice if needed.
- Pour the marinade over the chicken and steak and make sure all of the meat is well covered. Cover with plastic wrap and marinate for a couple hours or overnight.
- Cooking the meat on a grill will give you the best taste. However bakes in the oven is fine too. For the chicken – cook on each side for 5-7 minutes. The steak will take a little longer depending on the thickness and how you like your steak prepared.
- When the meat is cooked removed from the grill and cover with tin foil. Let it sit for at least 10 minutes before slicing.
Hearty Meatless Beef Queso
Ingredients
- 13 oz bag Gardein Beefless Ground Beef I used about 3/4 of the bag
- 16 oz Mexican Velveeta
- 1 Jalapeno Sliced thin
- 2 oz Crumbled Mexican Cheese
- 1 packet Low sodium taco seasoning
Instructions
- Cook the Gardein ground beef on the stove according to instructions. When it’s completely cooked – add 1/2 cup of water and a packet of low sodium taco seasoning.
- As the meat is cooking, melt the cheese in a pot over medium to low heat, stirring continually so it doesn’t burn. You could also do this in a crock pot.
- Add the meat to the melted cheese, reserving some for garnish later. Mix everything well and continue stirring for another minute or two. Transfer the mixture to a dish and garnish with the remaining beef, jalapenos, and Mexican cheese.
Easy Mexican Rice
Ingredients
- 1 box Zararain’s Spanish Rice
- 1 tbsp Chipotle Marinade
- 1/2 can black beans
Instructions
- Cook the rice according to instructions. When it’s done add the black beans and marinade. Mix well and serve immediately.

For the Margarita
- 1 bottle SkinnyGirl White Peach Margarita https://www.skinnygirlcocktails.com/the-cocktails/white-peach-margarita
- 1/2 Jalapeno seeds removed if you want it less spicy
- 2 cups Frozen Strawberries
For the Salty/Spicy Rim
- 1 tso TAJÍN® CLÁSICO SEASONING https://www.tajin.com/us/tajin-clasico/
- 1 tsp Margarita Salt
Instructions
- Add all of the margarita ingredients to a blender and mix well.
- Mix the Tajin seasoning and salt together on a plate. Before adding the margarita to a glass, wet the rim and dip the rim in the salt mixture. Add the margarita and enjoy!
