Roasted Tomatoes with Basil and Burrata

Ingredients
  

  • 1.5 cups Fresh Cherry Tomatoes
  • 2 tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/2 tsp Pepper
  • 1/4 cup Freshly Chopped Basil
  • 2 cloves Freshly Chopped Garlic
  • 1 ball Burrata Cheese
  • 6 slices Good Quality Bread
  • 2 tbsp Olive Oil for the Bread Brush evenly on each side of the bread

Instructions
 

  • Put the tomatoes in a large skillet and toss with olive oil, salt, pepper, and garlic. Roast at 400 for 20-25 minutes until they start to char and the juices release.
  • As the tomatoes roast, prepare the toast. Brush each side of the bread with olive oil and place in a grill pan for 204 minutes on each side.
  • When the tomatoes are just about done, remove the skillet from the oven and place the burrata cheese right in the center. Place it back in the oven for about another 5 minutes, or until the cheese starts to soften slightly.
  • Remove from the oven and top with freshly chopped basil. Dip the bread in the cheese and tomato mixture, using a knife to evenly distribute the mixture on the toast.
