Halloween Pasta Salad

Ingredients
  

  • 2 cups roasted cubed butternut squash
  • 1 cup parmesean cheese
  • 1/4 cup fresh parsley
  • 2 tbsp olive oil
  • reserved pasta water
  • 1 box of pasta (try to find Halloween colored pasta - regular pasta is just fine too)
  • 1.5 tsp salt
  • 1.5 tsp pepper

Instructions
 

  • Bring water to a boil and salt heavily. Add the pasta and cool al dente.
  • Reserve about 1 cup of the pasta water before draining. Do not rinse the pasta. 
  • Toss the pasta together with the rest of the ignredients in a pan over low heat. Let the water absorb and the cheese melt. Transfer the pasta to a serving bowl. Serve warm or cold.
