Grilled Tomato Bruschetta

Ingredients
  

  • 1 Baguette, cut in 1.5 inch slices
  • 3 tbsp Olive Oil
  • 1 tbsp Italian Seasoning
  • 2-3 Heriloom Tomatoes, sliced
  • 1.5 cups Whipped Ricotta and Feta Mixture
  • 1 large bunch Basil Leaves to garnish

Instructions
 

  • Mix the olive oil and Italian seasoning together. Brush each side of the baguette slices with the olive oil mixture. Place on the grill for 3-5 minutes on each side. Watch closely so the bread doesn't burn. Remove the bread and let it cool.
  • Meantime, 1 cup of Ricotta Cheese and 1/4 cup of feta together in a food processor until the mixture is fluffy and whipped. 
  • Add a dollop of the cheese mixture on each sliced of bread. Top with the tomato slices, garnish with basil and sea salt. It may even need a drizzle of olive oil on top right before serving.
