Arugula Salad with Lemon Vinaigrette

Ingredients
  

  • 8 cups Arugula
  • 6 strips Prosciutto
  • 1/2 cup Parmesan Cheese
  • 1 package prepared beef tenderloin from Trader Joe's or favorite type of prepared protein

Dressing

  • 2 Freshly Squeezed Lemons
  • 1 cup Olive Oil
  • 1 tbsp Dijon Mustard
  • 1/4 tsp Oregano
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • Mix all of the salad (except the protein) ingredients together. Then mix all of the dressing ingredients together. Moments before serving toss the salad with the dressing and top with the beef or your choice of protein.
