I swear by food prep! It makes my week so much easier. As a working mom, my weeks are so incredibly busy. Having healthy meals on hand throughout the week gives me more time to do the things I enjoy like working out and spending time with James and Lukas. I keep meal prep pretty simple yet full of flavor with some staples such as homemade pesto and homemade dressings.

Everything I prep is versatile; chicken, rice, and roasted vegetables. They can all be used a variety of ways such as in rice bowls, salads, or lettuce wraps. The homemade pesto and dressings take the flavor up a notch.

For the vegetables, I simply roast them with olive oil, salt and pepper. You can use those ingredients for any vegetable. Today I made roasted zucchini, broccoli, sweet potatoes, red skin potatoes, and brussel sprouts. I also stocked up on tomatoes, avocado, and eggs. All of those are good items to throw in your rice bowls or salads, too.

This week I made two proteins; blackened tilapia with homemade seasoning and grilled chicken. I made kabobs out of the chicken so they would be easier to throw bite sized pieces in rice bowls or over a salad. I put pesto on some chicken and just salt and pepper on the rest.

For the grain, I prefer brown rice, farro or barley. All three of these are healthy and more flavorful alternatives to white rice. Lately, I’ve been loving the 10 minute farro from Trader Joe’s. I love the texture, nutty flavor, and how quickly it cooks.
