I have a new favorite kitchen gadget! I’m obsessed with the Pampered Chef Waffle Stick Pan. It’s so stinking fun! For my first voyage with the new gadget, I made delicious Low Carb Savory Waffle Sticks. Okay, I know I sound like a crazy kitchen mom. Haha! It’s so great though. And I see a lot of fun recipes in my future with this gadget – and not just waffles either!
The waffle sticks are perfect for breakfast alongside some eggs and fruit. They’re a fun shape for kids, too! Lukas loves them. He called them “cookies”. I let him believe it. Woops.
They do taste just as delicious as cookies! I always prefer savory over sweet though. Perhaps Lukas is sharing my taste bud preferences?? There is no guilt in eating these either! I used the Keto Friendly Birch Benders Pancake & Waffle Mix. (Found it at Target). However, I doctored it up a bit to make the waffles savory.
I added freshly grated Parmesan and freshly chopped rosemary to the mix. It tasts delicious dipped in a egg. So good! I just love this combination! Luckily fresh herbs and cheese are allowed on the Keto died – WIN! NOTE: I’m giving Keto a try right now. I’m not strictly following Keto, just trying to incorporate the basics into my diet. I thought this diet would be a death sentence for me – as I LOVE carbs. But I’m learning it’s really not that bad! And there are so many great carb replacement options out there…like this waffle mix. Again I’m not strictly following it – I’m just trying to cut SOME carbs. So far so good! Especially when I get to eat delicious waffles like these 🙂
Mix all of the ingredients together and pour into a waffle pan or into the Pampered Chef Waffle Stick pan. Make sure you spray or butter the pan. Bake at 375 for 15-20 minutes.
Hard Boiled Eggs
Boil the eggs the same way to make hard boiled eggs. However, only boil for 5 minutes if you’d like the yolk over easy. Peel the top part of the egg shell back and cut about a 1/2 inch of the white part off.
