I love repurposing a meal and finding tasty ways to use leftovers! Remember the Classic Sunday Pot Roast I shared earlier this week? Well it was a big meal for our family of three so we had a lot of leftovers. Nothing went to waste though! I used the leftovers to create this Leftover Pot Roast Pasta Ragu. This dish is crazy good you guys! It’s a great easy weekday meal that looks and tastes like a completely different meal from the Pot Roast.

The only additional ingredient needed for this dish is the pasta! A sprinkle of parmesan cheese and some fresh herbs takes it to the next level but not necessary. The trick to making this dish with the leftovers is reserving all the liquid from the Pot Roast. If you don’t make a gravy the liquid and all that great flavor gets tossed. Just store the liquid until you’re ready to make the pasta dish and then heat it in a pan on the stove and let it thicken slightly.

Once the sauce starts to thicken, toss in whatever meat and vegetables you have left from the meal. Add in the pasta and some reserved pasta water and voila – you have Leftover Pot Roast Pasta Ragu! You can even make this dish if you don’t have a lot of meat and veggies left. There is so much flavor in the reserved liquid that it makes a great pasta sauce.

Any pasta shape will do for this dish! However, I like to use a rigatoni or penne. I’m not sure why I like that type of pasta better here but I just do haha. So, my point is just use whatever pasta you’d like!

Leftover Pot Roast Pasta Ragu

This dish uses reserved liquid from the Classic Sunday Pot Roast along with any leftover meat and veggies from the Pot Roast.

Ingredients
  

  • 1 box Pasta
  • 2 cups Reserved liquid from Classis Sunday Pot Roast
  • 1 cup Leftover meat and veggies from Classic Sunday Pot Roast

Instructions
 

  • The key to this dish is keeping the liquid from the Pot Roast Dish made earlier in the week. Just strain the liquid and store in a container for 2-3 days.
  • When ready to make thid dish you add the liquid to large pan and cook for 5-10 minutes until it thickens slightly.
  • As the pot roast liquid is warming cook the pasta until al dente or for about 7-8 minutes. Reserve some of the pasta water and toss the pasta into the pan with the pot roast sauce. Mix well.
  • Serve immediately with freshly grated parmesan cheese and fresh herbs/
