Beet and Yogurt Dip

This is such a colorful and delicious dip to add to any veggie tray! It’s so healthy, too! So easy to make!
Beet and Yogurt Dip

Beet Yogurt Dip

Servings 1 cup

Ingredients
  

  • 3/4 cup greek yogurt
  • 12 oz roasted beets
  • 3 tbsp feta or goat cheese
  • 1 tsp fresh thyme
  • 1 tbs fresh chives
  • 2 cloves roasted garlic
  • 1.5 tsp salt
  • 3/4 tsp pepper
  • 1 tbsp mayo
  • 1 tbsp buttermilk
  • 1 tbsp olive oil

Instructions
 

  • Blend all of the ingredients together in a food processor. Season with more salt and pepper if needed. Or add more olive oil if it is too thick. Pour in a serving bowl and add to a veggie tray or use as a salad dressing.

Roasted Beets

  • Wash the beets really well and set out for about 20 minutes to dry. Lay them on a tinfoil and sprinkle with olive oil, salt, and pepper. Wrap them well in the tinfoil and place on a baking sheet. Wrap no more than three beets in each tinfoil pack. Bake in a 425 degree oven until they are fork tender. Could take 45 minutes or more. Time varies depending on the oven.
