Healthy Creamsicle Popsicles: Three Different Recipes
Is it just my son or do your kids ask for ice cream and popsicles like 20 times a day in the summer? We’re not even halfway through summer and I think I have a small fortune invested in ice cream already. Oh, and the sugar my 4-year-old has consumed by eating them – let’s not even go down that road. One night, I was venting to my husband about how much these “summer treats” cost and how much sugar is in them and he said, “why don’t you just make your own then?” My first thought was, “yeah one more thing to add to my list”. But then my imagination started to go wild! I laid in bed that night thinking of different recipe combinations and the next day Lukas and I gave it a shot!
Together, we made three different types of Healthy Creamsicle Popsicles. It took less than 30 minutes, just a few ingredients for each flavor, AND it was a ton a fun! Lukas’s little neighbor friend helped us, too. The result – healthy, tasty, and less expensive creamsicles!
Lemon Lavender Creamsicle
I love the combination of Lemon and Lavender – especially in the summer! It’s such a refreshing flavor combination! This one was Lukas’s favorite, too! I’m always looking for ways to use my homegrown lavender and this was a perfect excuse! And so pretty, too!
Strawberry Basil and Mint Creamsicle
My favorite Herb is basil! I just can’t get enough of it. I’m constantly trying to find new ways to use it (as I have several large planters full of amazing basil). The basil, combined with the mint and strawberries, made the tastiest (and prettiest) creamsicle! I just love how these turned out!
Raspberry Rhubarb Creamsicle
Earlier this summer I made more than 20 cans of raspberry rhubarb jam using a recipe and rhubarb from mom. Homemade Raspberry Rhubarb Jam was a kitchen staple in our house growing up. Now, I always try to have some on hand for Lukas, too. So, naturally I had to make a special creamsicle with the jam as the main ingredient, too! And it didn’t disappoint. So good!
Healthy Creamsicle Popsicles
Equipment
- Blender
- Dixi cups or popsicle molds
- Popsicle Sticks
Ingredients
Lemon Lavender
- 3/4 cup Greek Yogurt
- 1/2 cup Lemon Curd
- 1/4 cup Whole Milk
- 1 tsp Cooking Lavender
- 1 tsp vanilla
Strawberry Basil and Mint
- 3/4 cup Greek Yogurt
- 1/4 cup Whole Milk
- 1 cup Strawberries
- 1 small handful Basil
- 1 small handful Mint
- 1 tsp Vanilla
Raspberry Rhubarb
- 3/4 cup Greek Yogurt
- 1/2 cup Raspberry Rhubarb Jam
- 1/4 cup Whole Milk
- 1 tsp Vanilla
Instructions
- Add all the ingredients into a blender or mixer and blend until smooth. Poor the mixture evenly into dixi cups or popsicle molds. Insert Popsicle sticks.
- Freezer for a minimum of 4 hours or overnight.
