Grilled Chicken Salad Baguette Sandwich

When we were in London recently, I had the most delicious chicken salad baguette sandwich. We got it at this small corner deli near our Airbnb. It was tastier then classic chicken salad! I asked the guy behind the counter how he prepared the chicken and he said it was grilled. Without knowing everything in the salad, I think this recipe gets pretty close.

Every week in the summer our little town has a music in the park event and I needed a fun picnic meal to take with us. I thought these baguette sandwiches would be perfect. Picnic Meal with Chicken Salad Baguette Sandwiches

I’ve never thought to grill the chicken for this type of sandwich, but it definitely adds more depth of flavor. Simply salt and pepper thin chicken breasts really well before putting on the grill. We use the Big Green Egg, which I think enhances the grill flavor.Chicken Salad Baguette Sandwiches

In an effort to keep the salad healthier than normal, I used half Greek yogurt and half mayonnaise for the base. I think Costco has the best Greek yogurt. I believe the brand of Greek yogurt definitely makes a difference. I always try to use a good brand.

Herbs helped kick up the flavor in this sandwich, too. I used a combination of fresh chives, rosemary, and parsley. I had some rosemary leftover which made for the perfect garnish. I simply took food paper liners I found at Target and wrapped it around the baguette with twine. So simple. So adorable. So Summer.Chicken Salad Baguette Sandwiches

Ingredients:

  • 4-5 cups chopped grilled chicken
  • 3/4 cup mayonnaise
  • 3/4 cup Greek yogurt
  • 1 cup red seedless grapes, halved
  • 1/4 cup chopped red onion
  • 2 tbsp slivered almonds
  • 1 tbsp chopped chives
  • 1 tbsp chopped parsley
  • 1/2 tsp chopped rosemary
  • 1 tsp dijon mustard
  • juice of half a lemon
  • Salt and pepper to taste
  • 4 large romaine lettuce leaves
  • 1 baguette

Directions:

Whisk together the mayonnaise, Greek yogurt, Dijon mustard, chopped herbs, almonds, grapes and lemon juice. Shortly before serving, slice a baguette into four parts. Slice each fourth down the middle, layer with romaine lettuce and dollop a generous portion of chicken salad on top. If you have any leftover chicken salad mixture, store it in an airtight container for a few days. It’s always better the next day!
