So, I’ve been reluctant to make overnight oats for a long time. I think it’s because I’m not a huge fan of oatmeal. I know I’m really selling this blog post 🙂 Anyways, I finally caved and Oh. My. Goodness. Why have I been so stubborn when it comes it overnight oats?? They’re so good! And so not boring (like I think oatmeal is). Now that I’ve tried them and LOVE them, so I’m sharing four ways to make overnight oats.

You can make overnight oats a gazallion ways. That’s what I love about them! I had no idea how creative you could get with this easy, make-ahead breakfast. Lets start with my favorite – Chocolate Mousse Overnight Oats. This tastes so good it feels like I’m eating dessert not breakfast. Isn’t that amazing?!

This breakfast is so high in protein, too! It will keep you feeling full and satisfied until lunch. It has always been hard for me to find a breakfast that keeps me satisfied until lunch. I’m usually starving by 10. But not with these overnight oats!

I love the color in this version of overnight oats. It always helps when your breakfast is pretty, right?! I mash some of the strawberries together to help create this pretty pink color. Just mull them in a small bowl and then mix it with the rest of the ingredients. It so easy and natural food coloring!

Blueberry Tapioca Overnight Oats

Blueberry Tapico Overnight Oats
This version of overnight oats tastes like blueberry pancakes in a jar. Way healthier, though! A little bit of maple syrup, mixed in with blueberries and oats – gosh it’s good! The chia seeds expand overnight and it tastes just like tapioca… I love it!

Raspberry and Chocolate Overnight Oats

I love the combination of raspberries and chocolate. For this version, I used cocoa nibs. You can find them in most baking sections. I found a nice sized bag for a good price at Trader Joe’s. I use them in my popcorn too! Just mix some in with the overnight oats, and then sprinkle some on top right before eating!
