Pumpkin Tiramisu

I’m not a huge fan of pumpkin pie but I love pumpkin flavor! So I thought this would be the perfect dessert. It’s simple, and doesn’t require any baking. Perfect for me! It needs to be made a day in advance, which is also nice. Again, one less thing you need to make on Thanksgiving.

Ingredients:

  • 10 ounces Mascarpone Cheese
  • 1 cup Powdered Sugar
  • 1 15-ounce can Pumpkin Puree, (15 ounces)
  • 1 teaspoon Pumpkin Pie Spice
  • 1 cup Heavy Cream
  • 1 1/2 cups Espresso Coffee, or strong coffee
  • 24-30 Ladyfinger Cookies
  • Chocolate shavings

Directions:

In a small mixing bowl, stir together the mascarpone, pumpkin, 2/3 cup of the powdered sugar, and pumpkin pie spice. Set aside.

Layer the bottom of a trifle dish with lady fingers an drizzle the layer with about 3 tablespoons of strong coffee. Spread about 1/4 to 1/3 of the pumpkin mixture ontop of the ladyfingers. Repeat until you have at least three layers. You may have enough for 4 layers. Cover and chill overnight. Before serving take a brick of chocolate and and a cheese grater to shave chocolate on top of the tiramisu.
