Tomato and Goat Cheese Puff Pastry Appetizer
Ingredients:
- 2 cups of cherry tomatoes cut in half
- 1 puff pastry sheet
- 1 cup of crumbled goat cheese
- 1 cup fresh chopped basil
- 2 garlic cloves diced
- 1 tbsp olive oil
- Salt and Pepper
Directions:
Roll out the puff pastry on a pizza stone or an greased baking dish. Crumble fresh goat cheese over the entire puff pastry shell. I used a generous amount because I love goat cheese. However, you can use as little or as much as you want. You can even use feta cheese if you don’t like goat cheese. Then arrange the cherry tomatoes on the puff pastry. Drizzle olive oil, garlic, salt and pepper over the pastry. Place in a 400 degree over and bake for about 25 minutes or until the puff pastry begins to brown. Take it out of the oven and let it cool. Sprinkle fresh basil before serving.
