Sausage Stuffed Mushrooms
These are definitely a crowd-pleaser! They are slightly labor intensive, but worth the work. People rave about these every time I make them. You can also make a vegetarian version by leaving out the sausage and adding spinach.
Ingredients:
- One 24oz carton of baby portabella mushrooms ( I buy them from Costco)
- 1.5 pounds of Italian sausage
- 1 8oz carton of cream cheese
- 4 cloves of fresh garlic (chopped)
- 1/2 cup of breadcrumbs
- 1/2 cup of Parmesan cheese
- 1/4 cup fresh thyme
- 1/4 cup of fresh parsley
Directions:
Cook the sausage in a pan over medium heat. Once the sausage is fully cooked add the remaining ingredients and mix well. Once everything is melted and cooked through set to the side to cool. Clean the mushrooms with a wet paper towel and remove the stems. Arrange the mushrooms on a baking sheet lined with foil or parchment paper. Fill the mushrooms with the mixture and sprinkle Parmesan cheese on top. Bake at 375 for 15-20 minutes.
