Roasted Cherry Tomatoes

Ingredients:

  • 4 cups cherry tomatoes
  • 3 tbsp olive oil
  • 1 tbsp fresh thyme
  • 4 cloves of garlic, chopped
  • Generous amount of Salt and Pepper

Directions:

Mix all of the ingredients together and spread over a cookie sheet. Use one large one or two medium cookie sheets. Bake in a 425 degree oven for about 20 minutes or until the tomatoes begin the blister and break open. This makes a large batch. I stored them in the fridge for up to a week and use them in dishes for breakfast and dinner. Or I eat them as a snack.
