Roasted Cherry Tomato Tart

Ingredients:

  • 3 cups of cherry tomatoes
  • 1 large store-bought pie crust
  • 2-3 tbsp dijon mustard
  • 3/4 cup Gruyere cheese
  • 1/2 cup Parmesan cheese
  • 2 medium white onions, sliced thin
  • 3/4 cup fresh basil, Chiffonade
  • 2 tbsp butter
  • Salt and Pepper

Directions:

In a large pan over medium heat, add the sliced onion, slat, pepper and butter. Sir occasionally for about 20-30 minutes until the onions are nicely caramelized. Set aside. Roll the pie dough over a tart pan and brush the pie dough with the Dijon mustard.

Sprinkle the cheese on top and then sprinkle the onions across the dough. Then on top of the cheese, add the tomatoes, olive oil and more salt and pepper. Bake for about 25 minutes in a 425 degree oven or until the crust is golden brown. Remove the tart from the pan and let is sit for a few minutes. Sprinkle with fresh basil right before serving.

TIP: For this recipe I combined two medium sized pie dough and I combined to make one big one to fit the tart pan. I had extra dough, so I made two small tarts as well. Just gauge the ingredients based on the size of your dough and tart pan.
