Roasted Cherry Tomato and Ricotta Cheese Crostini

Ingredients:
- 1/2 of a good crusty french baguette, cut in 1/2 inch thick slices
- 1 cup of roasted cherry tomatoes
- 1.5 cups of ricotta cheese
- Zest of one lemon
- 2 tbsp freshly chopped parsley
- 2 tbsp freshly chopped basil
- 2 tbsp of olive oil
- 1 tbsp garlic salt
Directions:
Pre-heat the oven to 375. Mix the olive oil and garlic salt together. Brush each slice of bread with the olive oil. Bake until the bread becomes slightly hard and golden brown. It could take as little as 10 minutes, so watch the bread closely. Set the bread aside. Mix the ricotta cheese, herbs, and lemon zest together. Once the bread is cooled, top each crostini with a dollop of the cheese mixture and then the tomatoes. Right before serving, sprinkle the top of each crostini with a little more fresh basil.
