Pickled Vegetable Pasta Salad
Ingredients
- 4 cups chopped or torn romaine lettuce
- 1 cup pickled cauliflower
- 1 cup pickled beets
- 1 cup marinated artichokes
- 3/4 cup english cucumber, chopped
- 2 cups cherry tomaoes
- 1 cup mini bell peppers
- 3/4 cup feta
- 3/4 cup olives
- 1/2 cup pesto dressing (just storebought pesto mixed with red wine vinegar and olive oil)
Instructions
- Wash the lettuce, cucumber, tomatoes, and bell peppers. Prepare the dressing which is just 1/2 cup of store bought pesto mixed with 2 tbsp red wine vinegar and 2 tbsp olive oil.
- Arrange all of the ingredients on a large platter and top with the salad dressing.
