Pickled Vegetable Pasta Salad

Ingredients
  

  • 4 cups chopped or torn romaine lettuce
  • 1 cup pickled cauliflower
  • 1 cup pickled beets
  • 1 cup marinated artichokes
  • 3/4 cup english cucumber, chopped
  • 2 cups cherry tomaoes
  • 1 cup mini bell peppers
  • 3/4 cup feta
  • 3/4 cup olives
  • 1/2 cup pesto dressing (just storebought pesto mixed with red wine vinegar and olive oil)

Instructions
 

  • Wash the lettuce, cucumber, tomatoes, and bell peppers. Prepare the dressing which is just 1/2 cup of store bought pesto mixed with 2 tbsp red wine vinegar and 2 tbsp olive oil.
  • Arrange all of the ingredients on a large platter and top with the salad dressing.
