Panzanella Salad
Ingredients
- 1 baguette made into croutons (just cube, drizzle with olive oil, garlic salt and bake at 400 for 20 minutes)
- 1 large tomato ( if available I use 1 small yellow, and 1 small red)
- 20 Greek olives
- 1 English cucumber
- Red Onion
- Basil
Dressing Ingredients:
- 4 tbsp of good olive oil
- 1 tbsp of Dijon mustard
- Juice of one lemon
- 2 tbsp of fresh garlic
- 1/4 cup of white wine or red wine vinegar
- Salt and pepper to taste
Directions:
Cut the baguette into cubes and arrange on a baking sheet. Drizzle with olive oil and garlic salt. Bake at 400 degrees for about 20 minutes. Set aside until serving. Cube the tomatoes and cucumber. Slice the onions, toss with the vegetables, and olives. About 30 minutes before serving or eating, toss the bread, vegetables and dressing together. Garnish with fresh basil.
