English Peas with Pancetta

Ingredients:

  • 1/2 cup pancetta
  • 1/2 finely diced onion
  • 2 cloves freshly chopped garlic
  • 1 tbsp olive oil
  • Salt & Pepper to taste
  • 1 bag Fresh English Peas (I buy them from Trader Joes)

Directions:

First I prepare the pancetta. I always buy the pre-diced pancetta from Trader Joes. I use one full package or about 1/2 cup of diced pancetta for this dish. I prepare it on the stove top over medium heat. The pancetta cooks pretty quickly because it’s diced so finely. It takes about 3-5 minutes before it’s perfectly browned. Once the pancetta is done, I set it aside and begin preparing the peas. Bring a put of water to a boil. The package says to boil the peas for no more than 90 seconds, however I don’t think that’s long enough. Boil the peas for at least two minutes and strain. Set the peas aside and heat 1-2 tablespoons of olive oil over medium heat. Add the onions and garlic and saute until the onions are translucent. Then add the peas and pancetta. Season with salt and pepper and pour into a serving dish.
