Curry Chicken Salad

Ingredients:

  • 2 boneless skinless chicken breasts
  • 1/2 cup of raisins
  • 3 green onions, diced
  • 1/2 cup of store bought shredded carrots
  • 4-5 tbsp Greek yogurt
  • 2 tbsp mayonnaise
  • 3 tbsp curry powder
  • salt and pepper to taste
  • 1 freshly squeezed lemon

Directions:

Boil the chicken in a large pot of water for about 30 minutes or until the chicken is fully cooked. Let the chicken cool. Once cooled, dice the chicken in small pieces. Add all other ingredients and mix well. You may need to add more or less Greek yogurt, depending on how creamy you like it. Serve in lettuce cups, a croissant or your favorite bread.
