Burrata and Tomato Bruschetta

Ingredients:

  • 3 cups of cherry tomatoes, halved
  • 1/2 half red onion, diced
  • 5 cloves of garlic, minced
  • Salt & Pepper
  • 1 french baguette, sliced in 1/2 inch thick pieces
  • 6-8 oz of burrata cheese
  • 1 cup of fresh basil, chopped
  • 1 tsp garlic salt

Directions:

Slice the baguette and brush with olive oil and garlic salt. Bake in a 350 degree oven for 10-15 minutes or until the baguette slices are golden brown. Set the baguette slices aside and prep the tomato mixture. In a bowl, combine the tomatoes, garlic, onion, 2 tablespoons of olive oil, salt and pepper to taste. Mix well and top the baguette slices with the tomatoes right before serving. Don’t do this too far in advance or the bread will get soggy. Pull the burrata cheese apart and add it to the top of the tomatoes. Make sure you don’t cut the burrata as pulling it apart helps keep the flavor in. Sprinkle a little bit of basil on every baguette slice. Enjoy!
