Prosciutto Wrapped Dates

This is another simple yet elegant appetizer. I love to add this to charcuterie boards or it make for a great stand alone appetizer. For this particular recipe I used blue cheese. Goat cheese is another great alternative. Lets be real, anything wrapped in a bacon-like  thing is delicious. Count on this being  a hit at your holiday cocktail party!

Ingredients

  • 5-7 slices of prosciutto  (sliced in half)
  • Dates (I buy the pitted dates from Target or Trader Joe’s)
  • 5 oz blue cheese

Directions

The pitted dates already have a little opening in them. I just open it a little further to get the cheese in. Take the goat cheese log and put it into a plastic bag. Cut a small slit in the corner of the bag and squeeze the cheese into the date. The amount of prosciutto you use depends on how many dates you make. These tend to go quickly at gatherings because they’re bite size, so I would make a generous amount. 1 slice of prosciutto (depending on the thickness you like) usually makes 4 dates. I make sure the prosciutto wraps around the date fully, so it’s not too thick but just covering all of the date. Arrange the dates on a baking sheet with parchment paper. Bake for 15-20 minutes at 400 degrees. Bake until the prosciutto becomes slightly brown and crunchy.
