Amazing Cauliflower Mash: You’ll never miss the real thing
I know Cauliflower is all the rage right now. I’ve tried many of the recipes out there. Some great, some horrible. This one is FANTASTIC! I’ve played with different ingredients quite a bit to get the perfect cauliflower mashed potatoes. I finally made the perfect version this weekend! The key is lots of fresh herbs, garlic, and parmesan cheese. Trust me, you will not miss the real thing! Give it a try this week.
Ingredients:
- 2 heads of cauliflower
- 1/4 cup of sour cream or greek yogurt.
- 1/2 cup freshly grated parmesan reggiano ( I buy the block from Costco)
- 3 cloves of chopped fresh garlic
- 1/4 cup chopped fresh chives
- 1 tbsp fresh thyme
- 1 tbsp chopped fresh parsley
- 2 tbsp butter
- Salt and Pepper to taste
- Milk or reserved cauliflower water (if needed)
Directions:
Bring a large pot of water to a boil. In the meantime, chop the cauliflower into small florets. When the water comes to boil add a generous amount of salt and the cauliflower florets. Boil the cauliflower until soft. Reserve about a cup of the water before draining the cauliflower. After draining the cauliflower in a strainer, return the cauliflower to the large pot that you boiled it in. Turn the heat to low and smash the cauliflower with a potato masher. Use the reserved water (or milk) only if needed to get a mashed potato consistency. Add the rest of the ingredients and mix well. Add the salt and pepper at the end. You may need at least 1 tsp of each. But taste it before adding too much. Reserve a little bit of the chopped chives, to sprinkle on top before serving.
