A Berry Delicious Summer Salad
Do you guys want to know a secret?? The combination of strawberries, basil, blue cheese and balsamic is the best thing ever!! No really – it is! Trust me! Those ingredients made A Berry Delicious Summer Salad! It’s so refreshing, so tasty, and perfect for a weeknight meal – or if you want to impress everyone at a summer picnic.
Strawberries are popping like crazy in Michigan right now. They’re so good, too! I don’t know if it’s just me or what but they taste so much sweeter this year. Maybe all the rain?? I have no clue but they’re good! And they are perfect in this salad alongside some blackberries.
I’ve always loved the combination of Strawberries and Basil — Strawberry Basil Martini anyone?? Anyways, I added a bunch of basil leaves to the spring mix and I’m so happy I did! Blue cheese is always good in a salad that’s a little more on the sweet side. Feta would also be good in this one.
The Balsamic Vinaigrette perfectly tied this salad together. It is so good! And it literally takes 2 minutes or less to make! Don’t use store bought dressing on this salad – trust me! Make this and make it in bulk because you’ll love it!
For most salads, I think any protein goes well. However, with this salad, I think anything other than grilled chicken wouldn’t quite do it justice. It was perfect! Hope you enjoy this salad as much as I do! Cheers! xoxo
A Very Berry Delicious Salad
Ingredients
- 2 Grilled Chicken Breasts
- 1 cup Strawberries, washed and cut in half
- 1 cup Blackberries
- 1 English Cucumber, sliced
- 1/4 Red Onion, thinly sliced
- 7 cups Spring Mix
- 6 oz Blue Cheese
- 1 Large Handful Fresh Basil Leaves
- 1/3 cup Balsamic Vinaigrette
For the Dressing
- 2 tbsp Balsamic Vinegar
- 1 tbsp Dijon Mustard
- 1/3 cup Extra Virgin Olive Oil
- 1 tsp Italian Seaoning
- 1/4 tsp Salt
- 1 tsp Freshly Ground Black Pepper
Instructions
- Toss all the ingredients together in a large bowl and toss with the vinaigrette right before serving. Divide among four plates. If serving later, wait to toss the dressing on.
