15 Minute Easy PEAsy Pasta Dish
Pasta + Veggies + Garlic + Lemon = Perfection! Most of my favorite meals involve pasta and lots of garlic but little effort! That’s why this 15 Minute Easy PEAsy Pasta Dish is perfect! It comes together so quickly and tastes like you spent all night preparing it. I made it twice in the last 5 days!
This dish only takes 5 main ingredients! I added peas and my favorite Trader Joe’s Sweet Italian Chicken sausage to it but you can really add any protein and any vegetables that you’d like. Just make sure you add lots of garlic and lemon.
The reserved pasta water and freshly grated Parmesan cheese helps give the pasta a creamy texture without the high fat from a cream based sauce. I love it! We love this for a weeknight meal because of the ease and if you use an entire box of pasta with lots of veggies and protein, it will last for a couple meals (hopefully). The next time you have a super busy weeknight meal, hardly any groceries in the fridge but you want a home cooked meal, give this a try!
15 Minute Easy PEAsy Pasta Dish
Ingredients
- 1 box pasta (any shape)
- 2 lemons (zest and juice
- 4-6 cloves garlic
- 3 tbsp olive oil
- 1 cup parmesean cheese
- 5 links chicken sausage, cut in 1/2 inch pieces and browned
- 1 cup peas
- Salt and Pepper to taste
- 1 large handful of fresh basil
Instructions
- Bring salted water to a boil, add the pasta and cool al dente. Reserve 1.5 cups of the pasta water. Add olive oil to a pan over medium heat. Add the garlic and saute for 1 minute. Add a splash of the reserved pasta water if the garlic begins to brown. Add the pasta, peas, and browned sausage. Add the rest of the pasta water, lemon zest and juice. Mix well and heat thoroughly for about 5 minutes. Add the Parmesan cheese and salt and pepper to taste. Mix well and remove the pan from the heat. Toss in a large handful of basil and serve immediately.
